North Indian Dinner

Intimate dinner party with fun folks last saturday--old and new friends. Traditional north Indian fare: Potato cakes, chutneys, papadum for starters; Chicken Tikka, Palak Paneer, Roasted Eggplant Bharta, Naan and Savory Rice for main course; Mango ice cream for dessert. Lots of sangria, laughs and fun chats.

Mystery Woman has requested recipe for savory rice. Here it is.

Indian Savory Rice (pulao)

Prep ahead: 4 cups Basmati Rice boiled with ½ tsp salt. Cool and refrigerate (cold rice does not clump together)
Pinch of saffron in warm milk (set aside for ½ hour).
½ cup thinly sliced onion
*6 cloves, 1 cinnamon stick, 1 bay leaf
Ghee
½ tsp whole cumin
Sugar/salt

Heat heavy bottom pot. Add 2 tbsp ghee and ½ tsp sugar, cumin, plus *. Wait till cumin sizzles and cinnamon uncurls. Add onion, brown onion nicely. Add rice, mix well, adjust salt. Switch off stove. Sprinkle saffron milk, fork through rice. Rice should be speckled, half white, half yellow.
